A Vegan Chocolate Cake With Avocado, But Without Butter And Eggs!

In this article, we’re going to present you a vegan cake that’s without butter or eggs that will be even loved by your kids! It has a silky-smooth frosting. The cake itself is light with lots of healthy fats and a chocolate flavor!

It contains avocados which are often referred to as the healthiest fruit of all. They contain an abundance of nutritional benefits.

One avocado contains all of these vitamins and minerals:

Vitamin C

Vitamin B1

Vitamin K

Vitamin B2

Vitamin B9

Vitamin B6

Vitamin E

Vitamin B3

Vitamin B5

Phosphorus

Calcium

Manganese

Iron

Zinc

Magnesium

Sodium

More potassium is present in one avocado than in one banana. A banana contains 10% potassium and an avocado 14% of it.

Ingredients:

Cake:
  • 5 tablespoons of dark chocolate cocoa powder
  • 3 cups of all-purpose flour (our suggestion is rice or coconut flour)
  • 2 teaspoons of baking powder
  • ½ a teaspoon of kosher salt
  • 2 teaspoons of baking soda
  • 2 cups of water
  • ¼ of a cup of olive oil
  • 2 teaspoons of vanilla extract
  • 1 ripe avocado that you’ll mash until it becomes smooth
  • 2 cups of sucanat sugar
  • 2 tablespoons of white vinegar

Frosting:

  • 1 cup of sugar
  • 5 tablespoons of dark chocolate cocoa powder
  • 2 ripe avocados that you’ll mash until they become smooth

Preparation:

First, you have to heat your oven to 350 degrees. You will use two 9” round cake pans that you’ll grease before use.

Whisk, the first five ingredients in a large bowl.

Then, use another bowl to whisk the following four ingredients with the olive oil. Add sugar in the end. Pour the wet avocado mixture into the flour mixture. Mix everything well until it becomes smooth. After this, divide the batter in both of the cake pans evenly. Bake them and check if it’s done after half an hour.

Leave the cakes to cool in the same pans. Then, leave them to cool down completely for additional 15 minutes. Put a layer of frosting on the first cake layer and after that, top with the second cake layer. The remaining frosting should be used on the top of the cake.
