Tasty And Crunchy Zucchini Fritters With Some Avocado Dill Dip! Yummy!

Zucchini Fritter with Avocado Dill Dip

It’s an excellent snack that you can take with you anywhere, even on a picnic. Here’s the recipe!

Fritter Ingredients:
  • ¼ of a cup of fresh basil
  • 1 tablespoon of lemon zest
  • 2 small or 1 large zucchini
  • ¼ of a cup of gluten free flour
  • 1 clove of garlic that you’ll peel and then mince
  • ¼ of a cup of fresh oregano
  • ¼ of a teaspoon of onion powder
  • ¼ of a teaspoon of pepper
  • 2 organic eggs or ‘Flax Egg’
  • 1 teaspoon of salt
Dip Ingredients:
  • ½ cup finely chopped dill
  • Avocado dip base

Instructions:

First, grate the zucchini. Then, put it in a colander and cover it with ½ a teaspoon of salt. Leave it to stay like that for 10 minutes and then transfer the zucchini on a clean kitchen towel so that it can absorb the moisture. When all the moisture has been absorbed, put the zucchini in a large bowl. Put the salt, onion powder, lemon zest, pepper, oregano, egg, basil and garlic and mix everything well. After that, put the flour very slowly, so that there aren’t any lumps.

After you’ve finished that, start heating 2 tablespoons of olive or coconut oil over medium heat. The oil should be warm enough so that the zucchini can sizzle when you drop them in. Put some of the zucchini mixture to form fritters. Make sure they are several inches apart.

They should be cooked until they become golden, for about 2 or 3 minutes. Turn them over from time to time so that they can cook on the other side, too. Put them on a plate. If you need to, you can add more oil in the pan for cooking.

Notes:

If you feel like your recipe could use more vegetables, add ½ a cup of spinach or finely chopped kale! The taste will be even more delicious!
