Okra (Hibiscus Esculentus), also known as gumbo, lady’s fingers, kiabo and okro, is a plant of Ethiopian origin, although it is now grown and cultivated all over the world. The pod of the vegetable has a greenish color and tiny seeds which can be added to broths, stews and salads.

  1. The best way to grow Okra is by planting five or six seeds just 2cm deep in a 15cm wide pot. Best variety according to information given to me by people from Sierra Leona in West Africa and also the Philipines is Lady’s Fingers. Fill the pot with a good quality potting mix, press it down to make it firm and compact, plant the 6 seeds in a pattern of one each in corner of a square with each end about 10c m apart. Add two seeds close to each other inside the square. One or both of them can become replacements if the corner ones fail to shoot. Only sow the seeds between mid August and early February. Leave the pots in the sun and water regularly. Add a little organic seaweed fertilizer to the water once a week.

  2. I plant my seeds in rows. Each row is 30 ft long. I soak the seeds in water for a couple of days to swell them up which makes germination a lot faster. I usually sow 6 rows like this. I cut it when it’s about 3-4 inches long. I get plenty to last me for months.

    • Hi Roslind, Okra I think is boiled, but if you go raw veggies and fruits and start juicing it is the best way to eat veggies. and I was cured of diabetes by giving up sugary foods to give that system a rest and the taking in the nutrients that are needed to heal that system in the body and it started working again. You can use one hand full of Kale, one hand full of spinach, on hand full of strawberries and one handful of blue berries, one quarter of a raw beet, it makes it so sweet and yummy and then rinse the beet leaves off and put them in the blender too, they are loaded with nutrients. then add about one or two bannanas to your liking and one hand full of cashews or what ever kind of nuts you like, fill your blender about 1/2 to 3/4 full of water and blend really good. It makes a great smoothie and gives you the nutrients you need to heal your body, if you can tolerate it add a few cloves of fresh garlic, garlic kills cancer cells and very healthy for the heart.     • I eat okra darn near constantly, boiled, broiled, roasted, baked, stewed, sauteed, barbequed, and even raw in my red cabbage salad. I loooove okra! Okra is one of several reasons I’m as healthy as an ox, or as the saying goes, as I don’t actually know how healthy oxen truly are…especially these days.

  3. Okra can be baked, fried, broiled, boiled or even grilled. It is common to use in soups, stews and gumbo.

    • We always used simple salt, pepper and a little vinegar . Okra gets a bit slimy when cooked and the vinegar reduces the slime while adding a little snap to the flavor. Likewise, okra can be sliced into rings and smothered or sauteed with onions and tomato. In this case, the acid in the tomato reduces slime and adds flavor. Delicious.

  4. Washed and sliced into about half to one inch pieces, then coated with corn meal and dry-fried to crispness, it’s delicious.

  5. Steam a heap of okra and use it as a side dish to grilled fish or chicken with potato salad. Yummy!

  6. Steam fresh okra in the microwave for about 3 minutes. It turns a beautiful bright green! Add a squeeze of lemon and a little salt – it’s a family favorite!

  7. I mix it with greens. Cook greens first add okra near end. Also I make a concoction of okra, tomatoes(canned /fresh) and corn(frozen/fresh). Heat. Then add a little jalapeno juice.Muy Delicioso!! I make hot water cornbread to accompany this feast.

I wash my okkra put it in a big pan pour water over it till barely covered put in a tablespoon of vinegar heat till okkra turns a light green take out of pan put in jars pour reamaining water over okkra seal hot bath to seal jars in cold weather when we no longer have okkra I open jars pour in large strainer rinse good shake off water cut up okkra and rool on cornmeal fry taste like fresh okkra.

  9. I cut the end part and slit the okra in half.
    Put some olive oil and put it in the microwave for 4 min. Tale it out and if it’s not crunchy put it again for 2 more min. Enjoy 😉

  10. Love “okra and tomatoes”: sauté sliced onion, some capsicum (bell pepper) with okra and add a can of pealed tomatoes and cook a while. Season with a little salt and dash of red pepper. Good over rice.
