That’s because grocery stores are sprayed with some growth inhibitors that keep the plants from the moment they sprout before they can be bought. The very same inhibitor is what prevents the plants to sprout when they are put into a pot with soil.
The ginger you’ll find in groceries can be full of fungicides and pesticides. You don’t even have a clue what it contains. There are some types of ginger bought in stores that never budges no matter how hard you try around it. If you don’t have a choice and you must buy ginger root from a grocery store, first put it in some water to be soaked completely and leave it like that overnight. That will help you remove much of the growth inhibitor.

Make sure you root you’ll buy is with skin that is tight and plump. It shouldn’t be old or shriveled. Make sure it has several buds (those are the bumps that resemble potato eyes). It would be a better root if the buds are greenish in color.
If your root is full of eye buds, cut them and put each of the buds into a pot. That will help you obtain several plants!
Choose the perfect pot!
Ginger is not like any other houseplant. It likes to be planted in pots that are wide, but shallow. Unlike most other houseplants, ginger loves shallow, wide pots. Its roots grow in a horizontal way. You must make sure that the pot you’re going to use will be comfortable for the plant.
This is the way to grow ginger indoors:
1. First, as we said it previously, you have to put the root in some warm water and leave it to rest overnight.
2. Your pot should be filled with a well-draining soil that will be very rich.
3. The root should be put in the soil so that the buds point towards up. Cover them with 1 or 2 inches of soil. Make sure it has plenty of water.
4. The ginger should be in an area without direct sunlight, but which is warm.
5. Always water it bit by bit. The soil has to be moist. You can also use a spray bottle.
6. Ginger grows very slowly. The first shoots will pop out of the soil after several weeks. Make sure the plant is watered regularly and that it is warm.
How to harvest ginger:
After the growth has started, after about 3 or 4 months you can harvest some tiny pieces of ginger. You can also find some of the rhizomes beneath the surface by pulling some of the soil at the sides of your pot. Cut the amount you need pressing it with a finger. After that, return it back in the soil.
You can harvest ginger like this as much as you want to. It will give you good roots, but you’ll have to take good care of it. If you want more ginger, uproot the plant by planting several rhizomes again and the process will start again.
